Yesterday, I posted the first video in this five-part series of Carma’s Cookery vodcasts. Monday was the first day of a 5-day detox from Manuel Villacorta’s book Whole Body Reboot: The Peruvian Super Foods Diet to Detoxify, Energize, and Supercharge Fat Loss. The reboot is organized by the colors of the rainbow. Yesterday was Red and today is Orange.

The dominant superfood in today’s smoothie is the papaya. I grew up eating this fruit with a bit of lemon juice squeezed in. To make this smoothie taste good, you need to make sure that your papaya is ripe and sweet.

To prepare, cut it in half. Then use a spoon to scoop out the seeds. The flesh should be tender, but still slightly firm. This is a good color for a papaya:

Embracing the Lessons of Food: An Interview with Dawn Lerman

My Fat Dad by Dawn LermanFood and family can be a complicated subject. Our memories, experiences and eventual relationship with food is often colored by our interactions and observations of our parents and food while growing up. The interesting thing is that two people can have similar experiences — for example an overweight parent — and come out with very different, sometimes even opposite — reactions and results.

Dawn Lerman, author of My Fat Dad: A Memoir of Food, Love, and Family, with Recipes, coming out at the end of the month, grew up with an overweight father and and under-eating mother, and yet became a board-certified nutrition expert who counsels clients on weight loss, diabetes, high blood pressure, and other diet-related conditions. Carma Spence: What inspired you write My Fat Dad?

dawn-lermanDawn Lerman: I originally set out to write a health book for kids about snacking. While I was compiling recipes I realized that each one of them had a memory attached to it. The memory was as important as the recipe itself — it was the people I was with at the time; where I was when I tasted it; and the smells that made it so important.

Nourishing yourself and your family is about the love you put into it, which led me to want to share about my family and my maternal grandmother Beauty, whose recipe cards and ultimately, cooking saved me and gave me a purpose. I was able to focus less on the chaos and loneliness I felt in my day-to-day life. The story of how real food had such a positive impact on my life, even in the face of my father’s great weight, felt like an important story. And I definitely wanted to provide the color and context around the recipes that were woven into the fabric of my life.

CS: It seems that much of your childhood was attached to food in some way.

DL: In my house, food and affection were inextricably tied. My father, a successful advertising executive — for popular food products (Leggo my Eggo, Coke is It, and Once you pop you can’t stop) — usually weighed around 450 pounds. His weight would often fluctuate a hundred pounds on either end as he tried (and failed) almost weekly to attempt the latest fad diet. He was always the best customer of the products he was marketing — especially when he was working on Kentucky Fried Chicken, Coke and Budweiser.

My mother, meanwhile, was an aspiring actress and thought food was a waste of money and time. She was happy eating one can of tuna fish over the sink a day.

CS: With that kind of background, how did you develop your passion for healthy eating?

dawnandmomDL: My parents had very busy social lives and luckily for me, I got to spend every weekend at my maternal grandmother Beauty’s house. When I walked into her kitchen, life transformed from processed packages of salty MSG instant soup to the delicious warm, fragrant smell of homemade chicken soup, sweet kugels and home baked poppy seed cookies. It was the only place I can remember feeling happy, safe and nourished. It was what I craved.

CS: So your grandmother became your saving grace?

DL: For a long as I can remember, my time spent with my grandmother revolved around our weekend dinners. On Friday when I arrived, everything was prepared, but on Saturdays we spent the day visiting the baker who gave us warm challah to snack on, the butcher who always gave her the best cuts of meat and the men at the fruit stand who showed us what was in season and ripe. It was very important to my grandmother that I learn about how to create a nice meal with fresh ingredients. “Bread gets moldy, fruit gets soggy and veggies get wilted,” she told me. “If it lasts for months on the shelf, imagine what it does to your body.”

But when I was nine years old my family moved away from my hometown of Chicago. In order to keep us connected my grandmother sent me a 20-dollar bill and a recipe card every week. That way, whatever she was cooking for my grandfather, I could cook for my family — but mostly my sister who I took care of, since the age of ten.

CS: You share a lot about both the good and bad of your upbringing. How do your parents feel about the book?

DL: Both of my parents love the book and are very supportive — my dad, always an ad man, told me “You’ve come a long way baby.” My mom, the ultimate stage mother, shares passages from the book wherever she goes. She just wishes there were more pictures of her in the center of the book.

CS: Your dad doesn’t seem to mind being called “fat.” Why do you think that is?

dawnanddadDL: While my dad struggled with weight his whole life, he was also an ad man, a comedy writer, and the life of the party. Being fat was just who he was. Now he has it under control but even when he was at his heaviest, he was able to step outside of himself and make jokes. Instead of bookcases, my dad had shirts of every size hanging all over the house, representing different weights.

CS: You mention that your dad is more in control of his weight now. What’s the story behind that?

DL: Today, my father weighs 220 pounds and is a vegan. How he got there is a story I share in my book. Food is no longer a barrier that keeps us apart, but a bridge that keeps us connected. There is nothing my dad enjoys more than talking with me about dietary theories and his weight-loss victories. And now I am the one regularly sending recipe cards to my father’s house, just as my grandmother did for me.

CS: It seems to me that with two opposing — and equally unhealthy — relationships to food, you might have found it hard to manage your own perception of body image and weight loss. Did you ever struggle with your weight?

DL: I love food and I choose food that will love me back, like green juices, super foods, smoothies, homemade soup and stews, and big salads. I go to the farmer’s market on Sunday and I try to buy what is in season. Or I go to Trader Joe’s and I stock up on both fresh and frozen fruit and vegetables, sprouted breads, beans, nuts, nut butters, and seeds. I try to cook on Sunday for the whole week and I make little snack bags for both me, my kids, and my clients. Also, when I am starving I usually have a big glass of water. Sometimes we think we are hungry, but we are actually thirsty or bored.

CS: What is your best advice for someone struggling with weight?

DL: As a holistic nutritionist I believe it is important to know your client before making any blanket statement. However, I do think drinking beverages other than soda, like Green Tea is important. Also, people should try to eat simple, filling meals and fill up at least half of their plates with veggies.

Finally, as my daughter says, if it has a commercial attached to it, it usually is not good — this goes for processed foods, especially. How many commercials do we see for kale or strawberries?

CS: If there was one take away from reading your book you would like readers to have, what would it be?

DL: Eating is about much more than protein and carbs and nutrients — it’s about family, history and identity. My grandmother Beauty put it best: “I can find my heritage in a bowl of soup.”

I hope my story helps families create happy memories around food. I also hope that food is seen to be more than just the macro-nutrients, protein, fat or carbs from which it is composed. I have always had a passion for taking any family recipe and making it healthier — I hope readers can see that good food can taste good and you don’t need to give up your traditional favorites if you are willing to exchange a few ingredients (There is an index at the back of My Fat Dad that explains what you can use as a substitute for most of the basics that go into every recipe).

I’ve been given a review copy and will be writing about my experiences reading it and testing out some of the recipes starting next month. However, in the meantime, I was able to get him to answer a few questions about his book hand his philosophy around eating like a Peruvian.

Carma Spence: What is a superfood?

Manuel Villacorta: There are many definitions of superfoods, and although there is no scientific definition, I define superfoods as hardworking functional foods that far surpass basic nutritional content. They are, quite simply, the cleanest, most powerful, antioxidant-rich, phytonutrient-rich and anti-aging foods available anywhere. And many of these nutrient-rich ingredients happen to come from South America, and more specifically Peru.

CS: Speaking of Peru, what is special about eating like a Peruvian … and why haven’t more Americans heard of this style of cuisine?

MV: Eating like a Peruvian from Lima is very different from eating like someone who is Andean or Amazonian. While the cuisine from Lima has fallen into a very westernized pattern, those from the Andes and Amazon regions have been eating the same foods for hundreds of years. However, only recently has the research on native foods such as lacuma, pichuberries and camu camu, to name a few, surfaced. American aren’t familiar with adopting such a diet because the research is still new.

CS: If this research is so new, what inspired you to develop Whole Body Reboot now?

MV: I began this approach to weight loss and lifestyle change with my clients, incorporating Peruvian superfoods into their everyday lives. The smoothie plan is how I start all of my willing participants and those who give it a try immediately reap the benefits. This book’s purpose is to spread this lifestyle regime, marrying the ideas of home-cooking and health.

CS: The book talks about a detox reboot. What does that mean? How is it different that the many detox programs people are more familiar with?

MV: The difference between the two terms, to me, is that detox claims the removal of unwanted chemicals in the body; while reboot suggests the feeling your body experiences when you give it a break from the constant stress we put onto our bodies through the food choices we make.

My 5-day reboot plan consists of five smoothies with different colored fruits and vegetables featured each day so that your body receives the widest array of nutrients while revitalizing the cells. By giving your body these much-needed nutrients, you will begin to feel cleaner, more focused, and you will lose weight.

Given that no one food, herb or remedy has the ability to cure ailments or disease, nor does it have the ability to ‘detox’ the body (that’s the liver’s job), I have followed the reboot with several customized and delicious Peruvian-inspired 7-day meal plans that you mix and match to your tastes and needs, whether you are male or female, an omnivore, vegetarian or vegan, or you follow a gluten-free lifestyle.

CS: Are all the recipes in your book Peruvian?

MV: No. The recipes all contain Peruvian superfoods, but each recipe is inspired by a variety of cuisines. Some are Peruvian, some are Thai, and much more are American-influenced. For instance, I recreated a waffle recipe into sweet potato waffle. I take traditional foods and make them more flavorful and healthier.

CS: You mention sweet potato, which is one of the 21 superfoods. It is so simple, I find it surprising that it is a superfood. Will other superfoods be surprising?

MV: Absolutely! Although many of these foods were presented in my last book, Peruvian Power Foods, I have added potent guests to this list, hoping to enlighten the American public of a wider array of nutrients. However unique and unfamiliar the food, I decided to stick to foods that were attainable in the United States.

For example, while pichuberry is still very new here in the U.S., it can now be purchased in mainstream markets like Bristol Farms, Safeway, Whole Foods and Vons in California, Arizona, and Nevada. It can also be purchased online and shipped anywhere in the country. The pichuberry is possibly one of the greatest superfruits available in the United States.

CS: Since you start Whole Body Reboot with a detox and provide meal plans, would you consider it a diet book?

MV: No, my book is not a diet book, and it is definitely not a fad or a gimmick. This book is more so a lifestyle approach to sustainable, long-term health. It gives my readers the ability to develop skills and knowledge that will help carry them on through the years, in the most independent way.

CS: Why should someone pick up a copy of your book over other Peruvian cookbooks?

MV: Not only do I offer 135 recipes, but I offer individualized 7-day meal plans that the reader can pick and choose from. I also provide health advice, given that I am much more of a dietitian than a cook. I tell the reader why eating these foods are beneficial, not just how to cook them. However, just because I am a dietitian does not mean I kill flavor for health. Rather, I marry the two and this book is their journey together.

Men and the Aroma of Pumpkin Pie

Did you know that men find the aroma of pumpkin pie arousing? At least that’s was Dr. Alan R. Hirsch, neurologic director of the Smell & Taste Treatment and Research Foundation in Chicago, says in his book What’s Your Food Sign? How to Use Food Clues to Find Lasting Love.

The book’s thesis is that our food preferences can show others what we’re really like. According to Dr. Hirsch, people choose foods that reflect who they are and “couples and not-quite-yet couples can learn about their future compatibility by observing what the other person eats.”

“We tested 18,631 married people over 20 years,” Dr. Hirsch told The New York Post. Using established personality tests, he and his team determined the specific character traits of his subjects. Then they looked at the study participants’ food preferences using a “forced-choice” methodology, in other words, test subjects had to choose from among five or six options to answer questions.

This research, originally created to help psychiatrists diagnose conditions in their patients, led Dr. Hirsch to believe that “food preferences can help you gain insight into who [a person you are dating] really is.” He also claims that his findings, reported in the book, are “statistically significant – that is to say, they are the case 95 percent of the time.”

Of course, “There are certain limitations to the study,” Dr. Hirsch acknowledged. “We didn’t ask people what they ate; we asked them what they would like to eat. We don’t know the strength of preferences. And we did these tests in the Midwest – so, in the United States, the Alaskans and the Amish might have food preferences we didn’t examine at all.”

Dr. Hirsch covers several different areas in his book, one of which is our sense of smell. In his research, Dr. Hirsch found the most stimulating scent for men “is a combination of lavender and pumpkin pie; number two is a combination of doughnuts and black licorice, and number three is a combination of pumpkin pie and doughnuts.”

Notice how pumpkin pie was mentioned twice? So, ladies, I guess if you want to get close to your man, bake a pumpkin pie. Now that’s a passion for pumpkins!
