A kitchen is more than the source of a hundred lovely meals. It’s more than a place for you to experiment with all the (fantastic) recipes you’ll find here. It’s a hub of family activity and a tool for everyday use. So it demands a certain level of care. A smarter kitchen owner is a cook that has to worry a lot less. Let’s get deeper into it.

Make sure you’re cleaning and repairing non-stick cookware with baking soda and water, then vegetable oil. How many times have you threatened to pull your hair out over looking for one thing or another in the kitchen? Avoiding the nightmare cleanup

A clean kitchen is something even a novice cook knows to cherish. After you’ve spent all that time cooking and enjoying a meal, you really don’t want to have to tidy everything up after. Get someone else in the house to do the dishes, but make sure any mess made while cooking is taken care of. The best way to do that is to tidy as you go. As soon as you’re finished with one ingredient, quickly wipe away the mess. When you’re done with a chopping board, rinse it. Deal with the mess you make in short, easy-to-handle bursts. That way you’re not cleaning up a whole kitchen after the work you’ve already done.

Your kitchen sees a lot of use. It takes a lot of time. But if you’re willing to put the work in and make a few changes, you can cut down a lot of that time. You’ll spend less cleaning, less organizing and more on actually making some gorgeous food.

Buying knives can be a breeze … or an exercise in confusion. What is a honesuki knife and what do I use it for? Is there really difference between a meat and a vegetable cleaver? What is the best way to store my knives. Well, in this quick guide, I’ll provide you with some basics that will help you understand what you’re looking at, using and buying when in the knife section of your cooking goods store.

Glossary for Buying Knives

When buying knifes, you need to know what your shopping options are. This glossary will help.

Boning knife – This knife is easy to recognized because of its narrow blade, which makes it perfect or carving around bones in both meat and poultry.

Chef’s knife – A basic, all-purpose knife used for chopping, slicing, dicing and mincing.

Honesuki knife – This Japanese boning knife has a triangular blade, which makes it easy to work around the bones and joints of poultry.

Meat cleaver – With its large blade, this knife handles big carving jobs. With a single downward stroke, a meat cleaver can slice through most cuts of meat.

Nakiri knife – A Japanese knife used for chopping vegetables.

Paring knife – This is a small, precise knife used for trimming and slicing fruits, vegetables and herbs.

Santoku knife – Ideal for mincing, dicing and slicing, this multipurpose knife is a hybrid of a chef’s knife and a cleaver.

Serrated knife – This is a long knife with a saw-like edge used to cutting loaves of bread without squishing the crust. For this reason, it is sometimes called a bread knife.

Slicing/carving knife – A thin-bladed knife used for cutting meat, poultry and fish.

Steak knife – A small, serrated knife used to cut through heartier meats that your traditional table knife won’t.

Tomato knife – This knife keeps tomato skins from tearing because of its very thin, serrated edge. You can also use this with citrus fruits.

Utility knife – Like a chef’s knife, but smaller. Used to cutting sandwiches, slicing meat and pretty much anything else that doesn’t call for a chef’s knife.

Vegetable cleaver – Like the meat cleaver, a vegetable cleaver has a wide blade. However, the blade is finer for it is meant to chop produce, which requires a little more finesse.

Choosing Your Knives

You will use your knives pretty much every day, so you want to make sure you are comfortable with them and that they will perform well in your kitchen. Therefore you’ll want to interact with a knife before investing in it. Here are some tips to help you choose the right knives for you.

  1. Hold different knives. How do they feel in your hand? Is it solid and secure in your grip? Is it balanced?
  2. Do you want your knives to match? You can buy knives individually or in a set. Beginner cooks are usually well served by the sets, but the more you use a knife, the more likely you should pick it out individually.
  3. Decide what material you want your knives to be made of. Stainless steel are easy to maintain and durable. So most people go with them. However you have other options:
    • Ceramic – rust-proof, impervious to acids, prone to chipping, don’t need sharpening as often, must be professionally sharpened, not as sharp as metal knives
    • Carbon steel – sharpest knives of all, easiest to keep sharp, must be cleaned and dried immediately after use
  4. How do you cook? Do you cook a lot of meat? Then you’ll need to buy knives meant for meat. Do you bake your own bread? Make sure you have a bread knife. Make sure that you buy knives you’ll actually use.

Essential Knives

When buying knives, you’ll want to make sure that you have on hand the four most commonly used knives. For most people, these four are all they need: Chef’s knife, utility knife, serrated knife and paring knife.

Caring for Your Knives

You’ve taken care to buy the right knives for your home, now you need to care for them so don’t have to go back to buying knives again!

First, you need to store them so that they are dulled and you don’t cut yourself accessing them. If you bought a set that comes with a block, you’re set. You can also buy blocks separately. A magnetic strip attached to the wall or your refrigerator is another way to keep your knives handy. Don’t keep them loose in drawer … they’ll dull while jostling against each other and you could get cut when reaching in to get one.

After each use, you’ll need to clean your knives. Do this by hand … dishwashers will dull and possibly damage your knives. Simply clean with warm water and soap then dry. Easy!

Alas, knives dull, so you’ll to to sharpen them occasionally. You have several options:

  • A handheld steel dowel much like a metal file.
  • A knife sharpener that you run your knife through.
  • Professionals at your local kitchen retailer.

One or the other won’t do; you need both. Far too many people only have a wok or a frying pan, not both. However, different recipes call for different pans, so having one of each on hand is crucial. While technically, both these tools do similar things, they’re not the same in any way. The main difference being the depth of them. While frying pans are good for frying meat, fish, eggs, pancakes and vegetables, they’re not any good for cooking bulkier things. For instance, risotto and stir fries both need to be made on the hob, but a frying pan is too small to hold them, that’s where a wok comes in handy.

Spatula

Out of all the kitchen essentials, a spatula is one of the most crucial and most basic. The most important thing to get right when picking a spatula is what type you need – rubber or metal, wide or slim. It’s important to think about the types of pans you have when deciding this, as if you have a Teflon coated pan, a metal spatula will ruin it. Instead, it’s best to opt for a rubber design. Tongs

For times when a spatula just won’t do it, having a pair of tongs on hand is crucial. Cooking Up a Kitchen

I thought twice about publishing this post.

About a week ago, I received a pitch email letting me know about IKEA’s new advert for IKEA’s new IKEA METOD Kitchen range. I clicked on the link to watch the video and had two reactions:

1. This is clever.

2. Some of this imagery is slightly disturbing and makes me very uncomfortable.

The video literally cooks up a kitchen, using miniaturized IKEA products as “raw ingredients” to highlight the fact that the new METOD range of kitchens can be put together according to very personal tastes.

Like much of IKEA’s products, METOD is a modular system. Each piece allows for easy installation in your kitchen, efficient measurement and accessible combinations of doors, interior fittings, hinges, colors, drawers and frames, etc.

I liked the idea of a modular kitchen and asked for more information. I thought they’d send me more information about the METOD kitchen. Instead, I received pictures from the video and a document with a story about the video.

Strange, huh?

Since Carma’s Cookery is about creativity, and this video is creative, I’m going to share it. It’s clean … you don’t need to worry about the kids seeing it … but I’d love to read your thoughts about the imagery. The scene with the screws gave me the willies.

A few years ago, I received the OXO Good Grips Lemon Zester with Channel Knife as a gift. Before that, I used the smallest side of a cheese grater to zest citrus. This product eradicated all the angst I felt about zesting — making it fun, too — and I never looked back.

Just in case you don’t know what zest or zesting is, zest is the outer, colored part of a citrus (lemon, lime, orange, etc.) peel. Zesting is the act of removing that layer. And the trick is to only get that colored layer and not get the white pith, which can be bitter-tasting. Zest is used for flavoring — it adds an oomph to your citrus-themed recipe. I’ve used it to intensify Orange Chicken, give more zip to a Lemom Bundt Cake and even add aroma to a cup of tea.

If you don’t have the right tool, zesting can be messy and, frankly, a pain in the ass. But the OXO Good Grips Lemon Zester with Channel Knife is a brilliantly designed right tool.

Durability

As I’ve mentioned earlier, this product is durable. It is solidly made and easy to maintain. I’ve had mine for over a decade and it still looks new. I’ve used it on lemons, limes, tangerines and grape fruit, and it has traveled around the country with me. I’ve dropped it on the floor and all that happens is that it bounces and rolls — no damage to the zester or my linoleum floor.

Who This Product is Suitable For

If you zest only once a year, I’d still recommend this product for you. It is reasonably priced, so I can’t think of a reason not to have it — especially if you read this blog! Having this gadget handy has increased my kitchen creativity because now I’ll add zest to things I might not have before, because it used to be too much work. Because this product makes zesting so easy, I know add zest to more things that cook. Here are some suggestions I’ve tried and loved.

  • Take an orange and use the channel knife to create long strips of zest. When preparing a frozen bag of orange chicken in a skillet, add the strips to pump up the orange flavor. I used this with Trader Joe’s Orange Chicken and just loved it.
  • Add zest to your next box of lemon cake to pump up the lemon flavor. If you want make it a bit more fun, use the zest of a lime instead.
  • Garnish a serving of fruit or ambrosia salad with large curls of orange, grapefruit or tangerine zest using the channel knife.
