Who doesn’t love helpful kitchen appliances? The one item your kitchen has to have to reduce your cooking time, increase the flavor in your food, or simply make life easier or help you to present food better. The truth is, there is such an array of kitchen appliances available that can cover our kitchen work surfaces that at some point we can run out of space to even prepare ingredients! (I’m experiencing that now since I received an array of them as wedding gifts last October.) So what kitchen appliances do you actually need? I thought I would share with you six appliances I believe you should consider.

Essential Kitchen Appliance #1: The pressure cooker

Have you ever gotten in from work or a long day out of the home and thought about your evening meal, only to realize that you have a big joint of meat to cook or something that is going to take far too long? We have all been there, and even the most prepared among us can have days where we forget about what we are going to cook. This is when a pressure cooker can really help. If you are ever unsure, then check out some of the pressure cooker reviews you can find online. A pressure cooker can help with reducing the time it takes to cook something, while still maintaining the flavor, the vitamins, and nutrients within the ingredients.



 

Essential Kitchen Appliance #2: The blender

blenderI love my blenders — I have two of them, a Vitamix and a Nutribullet. The former I use as my basic blender for pretty much everything … I can even “cook” with it. The latter I use for making smoothies on the go because it comes with a handy container and lid.

Blending a sauce or making a smoothie is something many have us have grown accustomed to, so a blender is an essential within your home, wouldn’t you agree? Enabling you to blend up soups, lumpy sauces or even make your favorite fruit (or chocolate, peanut butter and banana — my favorite!) smoothie in the morning.



 

Essential Kitchen Appliance #3: The juicer

Juicing has become something many of us are into, so there is no surprise that a juicer is becoming one of the must-have kitchen appliances. However, aside from doing the obvious, a cooking technique to try would be to juice a vegetable, and then cook a whole vegetable within the juices of its own kind. It makes for some great flavor within your cooking.



 

Essential Kitchen Appliance #4: The mixer

Making cakes, kneading bread, creating meringue or simply combining wet and dry ingredients are all made easier with a mixer. This is something that every home cook would like to have in their kitchen cupboards for sure. A hand-held mixer is great to have on hand if you don’t have the space for a standing mixer. But, as I know from experience, a standing mixer makes life so much easier when doing things that require a longer mixing time, such as making whipped cream.



 

Essential Kitchen Appliance #5: The slow cooker

A slow cooker is something that may be more used in the colder months, but it is a great way to remain organized and have a warm home-cooked meal ready for you at the end of the day. I have two of them, one large and one medium sized. I love the simplicity of cooking with a slow cooker — just load up the pot with your ingredients, switch on the timer and let it cook all day. This works well with anything saucy, cuts of meat, stews, and casseroles. I’ve gotten the tenderest pork this way.



 

Essential Kitchen Appliance #6: The steamer

Finally, a steamer is a fresh and easy way to prepare vegetables while still maintaining the nutrients and vitamins within them. It can also cook fish and meat, making it a great alternative method of cooking. There are even types of bread you can make in a steamer.



 
Of course, there are smaller kitchen appliances and gadgets you could have, that you can store away in your cupboards and drawers, but I certainly think the above list can help even the most amateur of cooks create culinary masterpieces.

Basic Baking Equipment

In yesterday’s post, I promised that today I would provide you with a list of the basic pieces of baking equipment you’ll need to start off in your baking adventures. So here is what I consider the bare minimum, plus a few handy “druthers.”

Measuring Cups and spoons

Your baked goods come out much better when you are able to carefully measure the ingredients. You’ll need a basic set of measuring cups that include 1/4, 1/3, 1/2 and 1 cup measurements. If you’re lucky, you can find one that includes a 2/3 and 3/4 cup measurement, as well.

Your measuring spoon set should include 1/4 teaspoon, 1/2 teaspoon, 1 teaspoon and 1 Tablespoon.

For extra credit, get yourself a straight icing spatula to make sure your measurements are level.

And finally, you’ll want a glass measuring cup to measure liquid ingredients.


Baking pans

A basic set of baking pans will include:

  • A 9 x 13 pan, which is good for sheet cakes
  • A jellyroll pan or cookie sheet. A jellyroll pan has a side on it and can be used to bake cookies, jelly rolls, and brownies. A simple cookie sheet is flat and can be used to bake cookies, as well as some bread and pizza.
  • A bread loaf pan
  • A cake pan
  • A muffin pan

Sometimes sets will include a pie pan, as well.

Now you purchase all of these items separately and create your own set. However, I recommend that when you’re just starting out with baking equipment, you get a set until you know what you like to work with. Sets are often less expensive than purchasing separate items.


Mixing Equipment

You will definitely need a set of wooden spoons. You can probably get a decent enough set at your local dollar store. Buy new ones regularly — about once a year if you use them a lot; once every other year if you don’t.

You should also invest in a good hand mixer. A standing mixer is nice, but you can get by with just a hand mixer. You really don’t want to have to beat your ingredients with just a wooden spoon!

You’ll also need a rubber scraper to scrape ingredients from the sides of the bowl. Again, you can probably get a decent set at your dollar store.


Mixing Bowls

You’ll need a set of mixing bowls in a variety of at least two, if not four, sizes. You’ll use the large mixing bowl the most, but a medium and small bowl is great for when you need to mix dry ingredients separately from wet ingredients.


Cooling Racks

You’ll need a cooling rack to help your cakes, cookies and other baked goods cool off before you serve them. There are some that are single stack, others that are multi stack. You just need a basic one but feel free to go fancy with the stacked options if you think you’ll be baking a lot of cookies.


Advanced Baking Equipment

Well, there you have it! Those are all the basic items you’ll need to get started with baking. Now if you want to get a bit more fancy, here are few more advanced baking equipment items you might want to put on your wish list.

Standing Mixer

Sometimes holding that hand mixer gets tiring, especially when you have to hold it with one hand while turning the bowl with the other. With a standing mixer, you don’t have to hold the mixer for however many minutes you need to mix. It also turns the bowl for you. This not only takes less of your energy but also frees you up to do something else (like preparing the next ingredient) while your batter is mixing.

My favorite brand in KitchenAid, but there are other brands that are high quality, as well.


Specialized Baking Pans

Besides your basic cake and pie pan, you might want to expand your reportoire to Bundt cakes (my favorite!) and tarts.

Bundt pans come in a variety of shapes, but for a beginner you’ll want the traditional one. You can’t go wrong with Nordic Ware’s Bundt pans, but there are other options.


The difference between a pie pan and a tart pan is in the sides. A pie pan’s sides are sloped, a tart pan’s are not. Also, a tart pan’s sides are often fluted.


Specialty Baking Pans

It can be a lot of fun to bake “mini” versions of muffins, sweet bread, and Bundt cakes. You can also bake cakes in fancy shapes. If there’s a niche interest, there’s probably a cake pan to go with it! You can find these types of pans in your local Michael’s or hobby store, as well as on Amazon — basically wherever you can find Wilton brand baking supplies.


Other Helpful Accessories

There are other things that can make baking easier, but you probably won’t use them a lot. So I’ll just list them here:

  • Parchment paper: You can sometimes use wax paper as a substitute. This paper is used to line pans so that what you are baking won’t stick.
  • Cupcake/muffin tin liners: These come in pretty colors and patterns. You can find them made of paper (one-use only) or silicone (re-usable). I’ve posted some examples below. They prevent your cupcakes and muffins from sticking and make them looks pretty, too.
  • Rolling pin: This is used when baking pies or fancy-shaped cookies
  • Cookie press: This is needed for certain types of cookies and allows you to make some pretty fancy shaped cookies
  • Pie crust shield: You can prevent pie crusts from burning by covering them with aluminium foil or one of these.
  • Silcone baking mats: Like parchment paper, they help baked goods not stick to the pan. You can also use them as a surface for rolling and kneading.

Kitchen safety should be one of your top priorities at home. Did you know that the kitchen is considered the most dangerous room in the house? If you spend a lot of time in a kitchen, at a guess, you have scars from knife mishaps. When I was a pre-teen, I was banned from using the serrated knife due to an injury I caused myself! You might be burned in several places from handling roasting pans. Or, thanks to splashing fat, there are parts of you where hair will never grow again. It’s amazing so many people consider cooking to be a job for the gentle. Those of us who do it often know the kitchen can be akin to a war zone. If you want to emerge from it largely unscathed, it helps to know what to avoid. Here are some kitchen safety tips:

Cooking In A Saucepan? Stir Away From Your Body.

Yes, you tend to stir in a circle, so at some point you’re always coming back towards you. However, if using a slotted or serving spoon, or anything with a bowl shape on the end, position that bowl facing away. If your hand jerks – and it happens to us all – you don’t want to be scooping boiling water or hot sauce all over you!

Never Cook In Bare Feet

This kitchen safety tip may seem like a no-brainer, but trust me, people do this. If you have a day off, it’s always nice to get up late and have an indulgent breakfast like waffles with sausage and eggs. If you’ve ambled into the kitchen in your pajamas, chances are you’re not as awake nor as dextrous as you’d usually be. So if you accidentally jar a knife off the worktop, the time between it falling and landing is just long enough to wake up and realize KNIVES + FEET = BAD. By which time it may be too late.

Kitchen Safety Technique: Learn How To Chop Onions

If you don’t have a gadget that chops onions easily for you (like me), here’s a safe technique: You start by chopping off the more stalk-like of the two ends, then place that end on the board and halve it vertically. From this point on, you can freestyle depending on the fineness of cut you want (finer for sauces, rough for a slaw) but always lay an onion flat side down. The Japanese steel of the best kitchen knives will carve through fish, onion, pepper and your hand very easily. Always make sure you’ve got a secure base to work on.

Remember: Pans Get Heavy

I’ve been painfully aware of this since my accident a year ago. It is only in the past few weeks that my left arm has been strong enough to start handling pots! Now, one of the coolest ways to serve an omelet is to slide it from pan to plate (espeically if you’re using a non-stick pan!). Little presentational flourishes like that can make you feel pretty good. That said, if you’re using a cast iron skillet, it might become less flourish and more floor-ish, as they have some serious heft (and aren’t that non-stick).

Yes, that sounds like a joke, but remember that a saucepan full of pasta or indeed anything made of cast iron is fine for cooking, but the longer you’re holding it the more likely you are to drop or spill – both of which can cause even bigger hazards if you slip on them. Set pans down on protective heat pads if you’re not immediately going to pour something from them.

Stop Stressing About Side Dishes

Slow Cooker to the Rescue

Easter is almost here and, if you’re reading this, I’m willing to bet that you’re already getting ready for the big Sunday family meal. Maybe you’re cooking for a few friends, or you’re having your extended family over for a nice ham dinner. Perhaps you’ve been asked to bring a dish or two to the church potluck dinner. Whatever the case may be, there’s no need to stress about getting everything cooked and keeping it hot and ready. There’s an easy way to cook up delicious sides without all the stress – in your slow cooker.

One of the big advantages of using your slow cooker is that you end up with a dish that’s very portable and it’s easy to keep warm. Just keep it plugged in until your guests arrive or when you get to your dinner destination. It also leaves your oven free to bake the ham and maybe even a pie or two for dessert.

What You Can Make in a Slow Cooker

There are all sorts of delicious side dishes you can make with this handy kitchen appliance. If you like potatoes with your ham, try making a batch of creamy mashed potatoes in there, or how about some cheesy scalloped potatoes. Macaroni and cheese is always a big hit with the kids. You can even repurpose your crockpot as a rice cooker and whip up a yummy flavored rice dish for the dinner table.

Root vegetables are particularly suitable for long and slow cooking. Try fixing your glazed carrots or a mix of potatoes, carrots, turnips and onions seasoned with garlic and rosemary mixed with a little olive oil and cooked on low for 8 hours or until all the vegetables are tender.

Cauliflower and broccoli in cheese sauce is always a big hit. Brussels sprouts or asparagus slowly steamed in the slow cooker can be incredibly delicious.

And remember casseroles. Most of your holiday favorite recipes can easily be adapted to be made in a slow cooker. You can either search for a crockpot specific version of your family’s favorite casseroles or follow the tip below.

How to Adapt Casserole Recipes

Cook the casserole on high for 4 hours for every hour you would bake it in the oven. Precook your meat before adding it and add most vegetables raw, at the beginning of the cooking process. Spring vegetables like peas, summer squash, zucchini, etc. only need about 2 hours to cook, so add them later. Reserve toppings for the last 30 to 45 minutes.

Cooking your favorite holiday side dishes in the slow cooker is easy-peasy lemon squeezy. Give it a try this Easter and see if you can’t free up some valuable oven space in the process.

Pie Iron Cooking – Get Experimental!

So last time I introduced you to the pie iron, and gave you a simple but yummy recipe for a basic fruit pie. This time I’ll give you some ways to really enhance that recipe, share some tips and tricks, and give you my absolute favorite dessert recipe. Let’s get cooking!

So you’ve played around with different fruit fillings, trying cherry, apple, blueberry, blackberry, lemon, strawberry and others, and they’re great. But have you tried swapping out the bread??? A good cinnamon swirl bread pairs great with apple or cherry filling. Try a sweeter Italian bread to pair with lemon or strawberry. Each time you use a different bread, the whole dessert pie tastes different. The combinations are nearly endless!

I’m sure you’re wondering just how to cook your pie the best. While it sounds simple, there’s really an art to cooking your pies right without turning it into a black charcoal mess. This is something that many people don’t do, or don’t do frequently enough. And don’t worry, you won’t ruin your pie or somehow destroy the cooking process. I’m referring to checking your pie while you cook! My secret here is that I don’t latch my pie iron when I cook. I bet you’ve seen the little hook attached to one of the rods of your pie iron, and you’ve probably used it too. But I’m here to tell you, it’s something to avoid.

You’ve seen cooking shows where the chefs are tasting their food as they go? The best chefs will tell you that you need to check your product if you are going to know when it’s at the right time to serve. Your pies are no different. After a few minutes over the fire, take your pie iron cooker out of the fire and pop it open. You are visually checking your bread to see how the color is coming along. Be sure to check both sides too, because one side might be getting done faster than the other. This is the way the pie iron pros end up with the best looking (and tasting) pies cooked over the fire.

Here’s another tip for you. When you go to purchase a pie iron, I always advise people to buy the cast iron version, not the aluminum. Why? Well, there are several reasons, but one of the main reasons is the fact that when comparing the two metals, aluminum has a lower melting point than iron. I’ve seen pictures of an aluminum pie maker that got too hot, and the metal actually warped! The pie iron maker really couldn’t be used after that because it wouldn’t close properly. You won’t have that problem with cast iron. Additionally, aluminum also transfers heat much faster than cast iron, so you could easily end up with more burnt pies using aluminum.

Okay, as my last parting gift, I give you my absolute favorite dessert: a chocolate-peanut butter pie! This is astonishingly easy, yet so good you won’t be able to stop yourself from making a second (or third). Here’s what you need:

  • Bread
  • Chocolate bar
  • Peanut butter
  • Butter

And here are the 4 cooking steps:

  1. Add a slice of butter to one-half, then cover with a slice of bread
  2. Add a half bar of chocolate and a tablespoon of peanut butter to the bread
  3. Add a slice of bread on top of the other slice, then put a slice of butter on top of that bread
  4. Close up the pie iron with the other half, then cook over the fire until golden brown

Just typing this up makes my mouth water! Yes, it’s really that good of a dessert. So, with these recipes and helpful tips, you’ll be sure to have the best-tasting pies in the neighborhood.

An Introduction to Pie Iron Cooking

First, a big Thank You to Carma for asking me to be a part of Pie-Palooza! I was really excited when she asked because I love pies, and I love talking about my favorite way to make pies.

When you think of pies, most people think of the lattice covered cherry or apple pie. Maybe you even picture it cooling on the window sill. But have you ever cooked your pie over a fire?!

Cooking your pie over a fire is easier than you think, all you need is a pie iron cooker. A pie iron cooker is basically a clam shell made of either iron or aluminum, and it is attached to 2 metal rods that end in wooden handles. This allows you to cook your pie without burning your hands, similar to a marshmallow fork.

Okay, great, you say, but when would I make these? Well, I’ve been using them for nearly 4 decades when I go camping. I used these when I was a kid, and loved making them. Now as an adult, I enjoy them because they are fun, but also because you can put nearly anything you like in them and they’ll be delicious!

But you don’t need to go camping to use pie irons. Even having a fire in your backyard is grounds for breaking out the pie irons. What a fun afternoon you’ll have with your friends, mixing and matching different fruit fillings and sharing each other’s concoctions. Going to the beach? Make a bonfire in the sand and cook your favorite pies. And they make a great conversation starter, as people will see what you’re doing and want a closer look. More than likely you’ll have someone say “Hey, I remember using one of those as a kid!”.

So, how do you use these pie irons? They are really easier than you think. You only need a few ingredients to make yummy dessert pies. This recipe comes straight out of my book Pie Iron Recipes and is a basic one that you can modify with your favorite fruit filling. Here are the ingredients needed for the recipe Basic Fruit Turnover:

  • Bread
  • Can of your favorite fruit filling
  • Butter

Yes, just 3 ingredients! Hey, I told you this was easy. Now you need to assemble everything in the pie iron itself. First, open the pie iron and if possible, separate the 2 halves, laying them both flat on the table. Next, follow these 4 easy steps:

  1. Add a slice of butter to one-half, then cover with a slice of bread
  2. Add some fruit filling to the bread
  3. Add a slice of bread on top of the other slice, then put a slice of butter on top of that bread
  4. Close up the pie iron with the other half, then cook over the fire until golden brown

A little tip when you are cooking your pie: check it often. The nice thing about pie irons is that you can pop them open to check on your bread. Like roasting a marshmallow, you are aiming for a nice, deep golden brown finish to your bread. Make sure to get both sides cooked.
