Hand-Held Food: The Perfect Choices for Your Summer Garden Mealtime

Hand-held food is great for summer parties. But there are some tricks of the “trade,” so to speak, you’ll want to keep in imind when crafting the perfect food for your beautiful summer. You might want to provide your family with a beautiful outdoor dining experience a few times a week. Or you might want to invite guests to come and experience your cooking skill on your newly installed outdoor veranda. However, food eaten outside is sometimes a little different than the food you can eat outside on a typical dinner table.

While the food needs to be more convenient, it needn’t be overbearingly difficult to make or be any less flavorful.

In order to experience the best that your kitchen has to offer while dining outside, consider providing family and friends with the following hand-held food items:

Pizza – The Ultimate Hand-Held Food

Pizza, famously easy to eat anywhere, is amazing to make from scratch but can be challenging to get exactly right. Once you’ve spread your dough, separated the cheese and come up with your own beautiful tomato sauce with a hint of spice, throwing your beautiful creation onto a pizza stone in the oven can lend your pizza the air of Italian authenticity. Stone grilling a pizza is much more preferable to your standard oven because it helps the bread stay more evenly crispy and lends that beautiful char-grilled flavor to the base itself. To help prevent sticking, scatter some corn meal on the stone before placing your pie on it.


Pizza is a great food item to make with your family. In dividing a lot of different ingredients, you can allow your children to place their own toppings. This, in turn, can serve as a fun activity for them. Hopefully, it will spawn the desire for your little ones to be competent cooks as they grow up.

Tacos – Hand-Held Food from South of the Border

Much like pizza, the intrinsically grabbable nature of a taco serves to make it the ultimate convenience food. When you makie the ingredients yourself, you can pull together some very flavorful options. For the perfect salsa, I’d recommend:

  • a small crushed garlic clove,
  • a squeeze of lime juice,
  • chopped coriander,
  • eight tomatoes peeled and chopped,
  • around a full onion also chopped very finely,
  • vinegar and
  • seasoning.

For a little taste of something different that really works, consider chopping two tablespoons of pineapple to bring out that citrus bite.

The only problem you’ll have with tacos is that they are so ‘more-ish,’ you’re likely to be all out while the guests satiate their hunger and beyond.

Never fear, if worried about children, you can find wooden skewers with ease that can be snipped at the end to prevent any sharp end injuries from occurring. Aside from that, using skewers to help cook various meats and cheeses, such as chorizo and halloumi, lightly seasoned with pepper and a very, very tiny sprinkle of rosemary can make for the perfect and most convenient appetizer. These can serve as a perfect side accessory to your main dish, and can also be happily used to mop up any of the salsa left over from your taco’s.

These foods, well made, should bring your family a beautiful mealtime worth remembering.

Try These Low-Carb Lunches Using a Slow Cooker

Your slow cooker is probably one of the most underused appliances in your kitchen. You may use it from time to time, but it will likely be for a dinner or for something specific. If you have decided to switch to a low-carb diet, you may feel like your slow cooker has no place in your new lifestyle. However, I’m happy to tell you, there are many lunches that you can make that fit in well with your low-carb diet and that can be made in a slow cooker. Here are a few ideas, most of which can be made in large batches and frozen or used for later in the week.

Stuffed Mushrooms

What? Stuffed mushrooms in a slow cooker? Yep, with just a few tweaks, you can make this a great lunch for eating at home or on the go. Ideally, you will want to use Portobello mushrooms for this because they have larger caps. They are also fat-free, very low in calories and rich sources of copper and selenium. To work well in a slow cooker, the filling should be made of cheese, ground pork, ground beef, and seasonings. Mix your filling and place in the caps. Place the caps in the slow cooker and cook for 2 hours on high or 4 hours on low. They can be placed into a lunch carrier or can be eaten on the spot with some pasta sauce to complete the dish.


Pasta-Free Spaghetti and Meatballs

spiralized zucchiniDouble what? Spaghetti without pasta? Yep, there are pasta-like alternatives for people on a low-carb diet. One option is to use a vegetable spiralizer to create “noodles” out of a vegetable such as zucchini. Or you can use spaghetti squash. You can even use the spiraled zucchini along with the spaghetti squash! The spaghetti squash can be roasted alongside the meatballs in the slow cooker. Just place a piece of rolled tinfoil in between to keep them separate. The meatballs can be whatever meat you like, just make sure you are not using breadcrumbs as the binder (that increases the carbs). Use egg and some cheese instead. Cook the squash and the meatballs on low for 4 to 6 hours. Take out the squash and use a fork to pull out the meat of the squash. It will make the noodles. Then just dress the noodles with pasta sauce and the meatballs.


Pulled Pork Bahn Mi

Lucky for pulled pork fans, this dish is incredibly easy to make in the slow cooker — and it can be easy to assemble as a lunch. Just place several pieces of boneless pork chops or a half pork loin in the slow cooker with a little water for 6 hours on high or 4 hours on low. Cook until tender, but thoroughly cooked throughout. Use two forks to shred the pork. Toss in a low-carb sauce like a low-carb oriental sauce and add some shredded cabbage and other shredded vegetables. Place the mixture into a purple cabbage leaf cup or “bun” for a finished meal.

These are only three options, but by using these options you can start to find out what other recipes may be good for you. Stuffed Italian pizza peppers, pasta-free pasta dishes, and more can be derived and tweaked to your own taste.

How to Have a Healthy Breakfast Every Day in Less Than Ten Minutes

Breakfast is the most important meal of the day, as the saying goes. Everyone — from little ones to adults — needs a good start. A nutritious breakfast gives you energy so you can work, learn, play and socialize. But people are so busy these days, they often go without breakfast. So how can you get the nutrients you need quickly? Here’re some ideas for creating a healthy breakfast every day in less than ten minutes.

Step One: Prepare in advance of shopping for ingredients

The weekends are the time when most families get their errands done. That means grocery shopping for the upcoming week. Sit down for a few minutes and plan the week’s breakfasts. Think about what you can make ahead. Great make ahead ideas include:

  • Whole grain waffles — pop them in the toaster in the morning before school. If you flavor them with spices like cinnamon and nutmeg, they may not even need syrup.
  • Fruity pancakes — pop them in the toaster. Add apple chunks or other fruit to the mix. Then your children can eat them by hand on their way out the door.
  • Oatmeal — steel cut oats warm up nicely in the microwave. And, you can put them in the frig at night with some water or milk and some frozen fruit. In the morning, they’ll be ready to eat cold or warmed in the microwave!

Other quick breakfast ideas include:

  • Yogurt with granola and fruit topping (You can cut up the fruit ahead of time)
  • Egg sandwiches. Try English muffins, a slice of American cheese, and scrambled or a fried egg.
  • Smoothie with protein powder. A smoothie is delicious, and with a yogurt base and lots of fruit, it can also be healthy. Add a scoop of protein powder to the mix to make sure you have enough energy to get through your morning successfully.

Step Two: Shop from the list you prepared

Once you’ve decided what to serve in the morning, make a list of the ingredients you’ll need. Head to the supermarket and make sure you shop from your list. The trip will go much more quickly.

Step Three: Do what you can ahead of time.

Spend an hour on Saturday or Sunday night preparing some meals ahead of time. For example, you can make a double batch of waffles and pop them in the freezer. In the morning all you need to do is put them in the toaster and serve. Breakfast in less than ten minutes.

Step Four: Commit to the process.

Yes, you’re busy. Find ways that your family members can help you prepare breakfast. For example, can they slice fruit? Can they stir the steel cut oats? Can they set the yogurt toppings on the table? Get the whole family involved.

Breakfast is an essential component of a healthy diet. With a little planning and forethought, you can make sure your entire family is well nourished. And you can accomplish it without too much trouble, stress or headaches. Remember, breakfast is important for you, too. Be a good role model and sit down with your family for that first meal of the day as often as you can.

Basic Baking Equipment

In yesterday’s post, I promised that today I would provide you with a list of the basic pieces of baking equipment you’ll need to start off in your baking adventures. So here is what I consider the bare minimum, plus a few handy “druthers.”

Measuring Cups and spoons

Your baked goods come out much better when you are able to carefully measure the ingredients. You’ll need a basic set of measuring cups that include 1/4, 1/3, 1/2 and 1 cup measurements. If you’re lucky, you can find one that includes a 2/3 and 3/4 cup measurement, as well.

Your measuring spoon set should include 1/4 teaspoon, 1/2 teaspoon, 1 teaspoon and 1 Tablespoon.

For extra credit, get yourself a straight icing spatula to make sure your measurements are level.

And finally, you’ll want a glass measuring cup to measure liquid ingredients.


Baking pans

A basic set of baking pans will include:

  • A 9 x 13 pan, which is good for sheet cakes
  • A jellyroll pan or cookie sheet. A jellyroll pan has a side on it and can be used to bake cookies, jelly rolls, and brownies. A simple cookie sheet is flat and can be used to bake cookies, as well as some bread and pizza.
  • A bread loaf pan
  • A cake pan
  • A muffin pan

Sometimes sets will include a pie pan, as well.

Now you purchase all of these items separately and create your own set. However, I recommend that when you’re just starting out with baking equipment, you get a set until you know what you like to work with. Sets are often less expensive than purchasing separate items.


Mixing Equipment

You will definitely need a set of wooden spoons. You can probably get a decent enough set at your local dollar store. Buy new ones regularly — about once a year if you use them a lot; once every other year if you don’t.

You should also invest in a good hand mixer. A standing mixer is nice, but you can get by with just a hand mixer. You really don’t want to have to beat your ingredients with just a wooden spoon!

You’ll also need a rubber scraper to scrape ingredients from the sides of the bowl. Again, you can probably get a decent set at your dollar store.


Mixing Bowls

You’ll need a set of mixing bowls in a variety of at least two, if not four, sizes. You’ll use the large mixing bowl the most, but a medium and small bowl is great for when you need to mix dry ingredients separately from wet ingredients.


Cooling Racks

You’ll need a cooling rack to help your cakes, cookies and other baked goods cool off before you serve them. There are some that are single stack, others that are multi stack. You just need a basic one but feel free to go fancy with the stacked options if you think you’ll be baking a lot of cookies.


Advanced Baking Equipment

Well, there you have it! Those are all the basic items you’ll need to get started with baking. Now if you want to get a bit more fancy, here are few more advanced baking equipment items you might want to put on your wish list.

Standing Mixer

Sometimes holding that hand mixer gets tiring, especially when you have to hold it with one hand while turning the bowl with the other. With a standing mixer, you don’t have to hold the mixer for however many minutes you need to mix. It also turns the bowl for you. This not only takes less of your energy but also frees you up to do something else (like preparing the next ingredient) while your batter is mixing.

My favorite brand in KitchenAid, but there are other brands that are high quality, as well.


Specialized Baking Pans

Besides your basic cake and pie pan, you might want to expand your reportoire to Bundt cakes (my favorite!) and tarts.

Bundt pans come in a variety of shapes, but for a beginner you’ll want the traditional one. You can’t go wrong with Nordic Ware’s Bundt pans, but there are other options.


The difference between a pie pan and a tart pan is in the sides. A pie pan’s sides are sloped, a tart pan’s are not. Also, a tart pan’s sides are often fluted.


Specialty Baking Pans

It can be a lot of fun to bake “mini” versions of muffins, sweet bread, and Bundt cakes. You can also bake cakes in fancy shapes. If there’s a niche interest, there’s probably a cake pan to go with it! You can find these types of pans in your local Michael’s or hobby store, as well as on Amazon — basically wherever you can find Wilton brand baking supplies.


Other Helpful Accessories

There are other things that can make baking easier, but you probably won’t use them a lot. So I’ll just list them here:

  • Parchment paper: You can sometimes use wax paper as a substitute. This paper is used to line pans so that what you are baking won’t stick.
  • Cupcake/muffin tin liners: These come in pretty colors and patterns. You can find them made of paper (one-use only) or silicone (re-usable). I’ve posted some examples below. They prevent your cupcakes and muffins from sticking and make them looks pretty, too.
  • Rolling pin: This is used when baking pies or fancy-shaped cookies
  • Cookie press: This is needed for certain types of cookies and allows you to make some pretty fancy shaped cookies
  • Pie crust shield: You can prevent pie crusts from burning by covering them with aluminium foil or one of these.
  • Silcone baking mats: Like parchment paper, they help baked goods not stick to the pan. You can also use them as a surface for rolling and kneading.

How to Overcome a Fear of Baking and Learn to Love It

fear of bakingI LOVE baking! I love eating baked goods. I’ve been trying my hand at baking since I was about three years old. So, imagine my surprise when I learned that there are people who are afraid of baking!

For some reason, baking is one of the least common kitchen skills. Most people will learn to cook with the stove, fry things, and even use the oven to bake lasagnas or potatoes, but not how to bake cakes, cookies, and bread.

A lot of this has to do with how precise baking is. You need to measure out the wet and dry ingredients exactly, and you need to buy a lot of special items that you usually won’t use for other recipes. For example, cream is rarely ever used outside of cakes (unless you’re making some kind of creamy pasta sauce) and it takes a lot of patience and storage area to become a successful baker.

As a result, it can sometimes become a daunting thing to learn and we simply don’t have time for it. After all, if we can just go to a store and buy a cake that would otherwise take a lot of effort and time, why should we bother learning how to bake? Stores and bakeries will do it better than us, and it can be a little harder to learn than other types of cooking.

However, learning to bake is a great way to boost your confidence in the kitchen. As it turns out, the preciseness of baking isn’t absolutely required. Even when something fails you (usually) get something that is still perfectly edible. For example, I once made a chocolate torte for my father. It used whipped egg whites for leavening. However, at the time, I had no idea that there were different sized eggs. My father had purchased medium sized eggs, and when recipes refer to eggs, they assume large eggs. So I didn’t compensate and the resulting torte did not rise. It was tasty — but not light and fluffy as it was supposed to be.

In contrast, if you under or overcook pasta, meat or vegetables, then you usually get an unpleasant texture and a pile of mess that isn’t very nice. Baking also becomes smooth and easy once you get the basics down. You can easily make your own recipes, adjust how sweet something is, and share your creations with friends and loved ones.

So to help you overcome any fear of baking you may have, here are a couple of simple tips, tricks, and pieces of advice.

Practice patience when you start baking

Patience is key when baking. Make sure you give yourself some time to prepare the ingredients and bake because the entire baking process is going to take a long time. And mixing everything will eat up a good chunk of your time and energy. Try to clear your schedule so there’s nothing planned after baking. You don’t want to feel like you’re being rushed and you need to reserve some time to have a second attempt if the first one doesn’t quite go as planned. An empty house is best so that you don’t get family members or roommates staring at you while you work.

Try simple recipes

There are plenty of simple recipes. Some (funnily enough) don’t require baking at all, but they result in delicious cake-like creations. This might seem counter-intuitive since you’re not actually baking, but the idea of making something like a cake and measuring out the exact ingredients is good practice for both your skills and your confidence.

There are also brownies you can make with very few ingredients, and there’s always the option of making an icebox cake if you really want to cut down on cooking effort. Simple recipes are a great way to get something delicious in a short amount of time. The boost of confidence it gives when you share your creations with friends and family is fantastic, and it will go a long way to helping you become more skilled at baking.

Buy the right baking equipment

Equipment in baking is important. You’ll need a variety of tools, such as food processors, mixers, pans, trays and even thermometers. Scales are also incredibly important due to how precise baking can be. You’ll need to measure out exact amounts of ingredients, and nothing accomplishes this as fast as kitchen scales. If you’re baking, you’re also going to need an oven. While most kitchens come equipped with an oven, many people see it as the main wall to overcome when learning how to bake. This is because the oven can get extremely hot or it might be located in a place that isn’t very comfortable to reach due to an injury or disability. Follow recipes properly

There’s nothing worse than thinking you know better than the recipe you’re following. At least while you’re learning, don’t substitute any kind of ingredients because you won’t know what you’ll end up with. It’s possible to do it as an experiment, but try your best to stick to a recipe and follow it carefully. Make sure your measurements are accurate, ensure the temperature of your oven is set to the right heat and don’t neglect to re-read important sections in the recipe to ensure you get the best results possible. Do things in the order they are written and pay attention to what the recipe asks for you to do. For example, if the recipe says to save some chocolate, then save that chocolate. If it asks you to mix, then you mix and you don’t fold — there is a difference!

Share your creations

Baking will always create portions that are larger than what a single person can eat — so why not share them? As mentioned before, it’s a fantastic way to boost your confidence and collect feedback on how you did. Some people might not like your creations, others might love them, but the mixed response and feedback you receive (as long as it’s constructive) will go a long way in helping you become a better baker.

Get over your fear of baking and learn to share your creations with people to make them smile. It’s a good source of motivation and it can be a lot of fun.

Cooking Strategies for the Disabled

In February of last year, I was hit by a car while crossing the street. As a result, I was in a wheelchair for about a month. And, because I broke both bones in my left forearm, my hand is to this day weaker than my right. The result, I’m not able to do all the things I was once able to do in the kitchen and have had to makes some adjustments.

Whether your physical disability is permanent or temporary, you may need to make some adaptions around the home in order to carry on with your day-to-day life. These adaptations can help you live at home without losing your independence.

In this blog post, I run down some tips and tricks that can help disabled individuals in the kitchen and allow them to continue cooking their favorite meals.

De-Clutter Your Kitchen

If there are too many items stored in one cupboard or drawer, you can find it very difficult to remove one of them. So, it’s a good idea to spend some time decluttering your kitchen. Make sure that there aren’t too many items and ingredients spread out on top of your countertops. Give yourself plenty of space. Plus, don’t overfill any storage units. This could restrict your access to things that have been placed in the back.

Forget About Knives

Some disabilities make it difficult for individuals to use their hands properly. If you have a poor grip as a result, you should try to reduce your use of knives, as they could easily slip out of your hand and cause injury. One thing that stands up to the amazing test of being easy to handle as well as efficiently chopping is a food chopper. All you do is place the food that needs chopping inside and then you pull the handle. The blades inside whizz around, chopping all of the ingredients up! Some blenders and food processors can help you with this task, as well.


Think about Countertop Height

If you are in a wheelchair, you may need to reconsider the height of your countertops. After all, those at a standard height will probably be too high for you to use while you are sitting in your chair. However, there are plenty of companies that can fit lower countertops, which will make it easier for you to get to work in your kitchen.

If you can’t remodel your kitchen, you can invest in a kitchen counter station that will work for you. This would be a rolling or stationary table that is the right height and width for you to easily access while sitting in your wheelchair. You may have to improvise or have something custom made. A quick search on Amazon revealed no good results.

Modernize Your Kitchen

If you can afford to completely modernize your kitchen, you may find that adding lots of new appliances can enhance your cooking experience. For instance, if you add a dishwasher, you won’t have to struggle to reach your sink to wash all your dishes anymore. When you do add more appliances, make sure that they are easy for you to use. You can often find ones with extra big buttons and dials which can be easier for those with a disability to use. Also, make sure that they don’t have sharp edges or corners. Otherwise, you might hurt yourself if you accidentally ride your wheelchair into them!

Lots of people enjoy cooking and baking. There is no reason why a disability should prevent you from enjoying this pastime. Just follow all of the above tips, be creative, and you can make cooking easier for you!

Health Conscious Cookery Swaps that Also Taste Good

We all want our meals to taste great. It’s the reason why we spend a lot of time finding the right recipes and putting our hearts and souls into the meals that we make. But, you may realize that some of the things you make just aren’t as healthy as they could be.

Does this mean you should stop cooking in the first place? Definitely not! Instead, to make sure that you’re making tastier meals that are still good for you, here are a few health conscious swaps that you may want to make when you prepare your next meal.

The Right Oil

We all have our preferences when it comes to the oils we use in cooking. However, did you know what some of them are not that great for you? There are bad monounsaturated fats in things like vegetable oil that can get worse when the oil is heated. Also, since Canola oil is made from modified rape seed, it can cause an allergic reaction — much like seasonal allergies — for some people. Therefore, you may want to think about swapping vegetable and sunflower oils in your cooking for something like olive oil or even nut oils.

Oils I like to use include olive oil, coconut oil, and sesame seed oil. Depending on which oil you use, how much you use and how you use it, these oils can add to the taste of your meals, as well. I like using a less expensive, light colored olive oil for basic cooking. The lighter the olive oil, the less strong the flavor. Coconut oil is also really good for basic cooking but can add a faint coconut flavor to the meal. Sesame seed oil is great for high-heat cooking as it can withstand the temperature well and is often used in wok cooking.

Treated Water

Next up, let’s take a look at the water you’re using. You may find that your home water system is quite hard or even highly chemically treated. Both factors are going to affect the taste of your food. Therefore, you may want to look into the specialist treatment options available like those that Quality Water of the Carolinas provides for softening water and removing chemicals. This can also be important if you drink a lot of water from the tap.

I’ve also heard that alkaline water can make a difference in the taste of your food, as well as being more healthful for your body in general. A woman I met who sells chocolate covered strawberries swears it is the alkaline water she washes the berries in that makes her treats taste so much better!

A Lighter Carb Alternative

As much as we all love carbs, you’ve got to admit that sometimes they can be far too much for some meals. If you want to take care of your health and make sure that your food is super yummy, then you may want to use lower carb alternatives. Things like zucchini noodles or cauliflower rice are incredible replacements for pasta and rice. (I’m a recent convert to cauliflower rice — it tastes great!) But there are definitely a ton more creative options for you to try out with your cooking.

Lower Fat Meat

If you’re a meat eater, then you may be aware that certain meats are a lot fattier than others. When you do eat meat, you’d probably agree that beef is one of the tastiest kinds around. But, it isn’t that great for your heart. So, you may want to eat it in moderation and try to switch it out of some of your recipes and use turkey instead. (I know this is sacrilege for the true beef-lover, but with a little creativity you can convert the staunch steak eater to a lighter meal.)

Store Bought for Homemade

Sometimes, you head to the store to pick up things like sauces or even ready meals without a moment’s thought. But, they can often be stuffed full of different additives and preservatives, and may be high is salt, too. It may not seem like it, but it’s often easier to make your own sauces and meals, especially if you prepare them in large batches and freeze what you don’t use. So, why not try your hand at whipping up homemade versions of some of your store-bought favorites and enjoy the knowledge that they’re not only tastier but better for you too.

One last idea — add more superfoods to your diet, using them instead of less nutritious options. For example, use purple potatoes instead of regular potatoes in your roasted potatoe side dish.
