5 Ways to Bake Healthy Christmas Cookies

Do you ever wish there were healthy Christmas cookies? I don’t know about you, but Christmas time is pretty much cookie time! I’m a total cookie monster and all those delicious varieties of cookies can add up to a lot of sugar and calories. So how do you enjoy your cookies and eat healthier, too?

The obvious idea is to eat fewer cookies. But that isn’t always practical, am I right? Another idea is to make healthy Christmas cookies. So, here are some ideas to make the cookies that you bake healthier, whether they become gluten-free, low-carb, or lower in fat and calories.

Healthy Christmas Cookies

Healthy Christmas Cookies Idea #1: Switch to Dark Chocolate

dark chocolateQuite a few Christmas cookies contain chocolate, but that doesn’t mean you need to do without these yummy cookies when you are trying to be healthier. A better way to make healthy Christmas cookies with chocolate is to make the switch to dark chocolate.

Dark chocolate has slightly less fat and calories than milk chocolate. But more important, dark chocolate is good for you. It is filled with antioxidants, and sometimes even doctor-recommended. Add dark chocolate chips to your favorite Christmas cookies to make them a little healthier.

Healthy Christmas Cookies Idea #2: Roll Flatter Sugar Cookie Dough

A super easy way to cut the overall fat and calories per cookie with traditional sugar cut-out cookies is to roll the dough flatter. You are going to reduce the portion sizes but still, have some amazing sugar cookies. It is a simple way to get some cookies that will cut the nutritional facts in half, but by using the exact same sugar recipe your family is used to. It also lets you have more dough to make even more cookies than you are used to making. Of course, this doesn’t give you license to eat more of them. That will defeat your point!

Healthy Christmas Cookies Idea #3: Use Healthy Oils

coconut oilAnother thing that Christmas cookies often have in common is using a lot of fats, such as butter. However, you can easily make them heart healthy by cutting out those fats and instead switching to healthier oils.

Get rid of all the butter, shortening, and vegetable oil in the recipe, and opt for coconut oil or olive oil instead. There are even some substitutions that allow you to use pureed fruit to replace the fats and make them even healthier.

Tips for replacing butter for healthier oils:

  • Coconut oil — This is pretty much an even exchange, just be sure the coconut oil is the same consistency as the recipe needed for the butter. Cookies made with coconut oil tend to be crunchier.
  • Olive oil — For every Tablespoon of melted butter, use 2-1/2 teaspoons of olive oil. Remember to use a milder flavored oil and don’t try substituting in recipes that require you to cream the butter and sugar. Coconut oil would be a better option in that case.

Healthy Christmas Cookies Idea #4: Try Adding Some Dates

If you feel that your holiday cookies need to be sweeter, but you want to reduce the amount of sugar being used, you can replace the sweetness with dates. Dates are a type of fruit that tastes a bit nutty, but in general, has a mild flavor. They contain a lot of sweetness, so when you puree them and add them to your cookie recipes, it makes a big difference without adding to the fat or calories of the cookies recipes.

Healthy Christmas Cookies Idea #5: Increase the fiber

oatsIf your recipe calls for all-purpose flour, you can replace up to half of it with whole wheat flour. The resulting cookie may have a courser texture and then there may be less volume of dough, but you’ll increase the fiber of the cookie. Other ways to increase the fiber in your cookies include:

  • Add flaxseed meal to the dry ingredients. A single tablespoon can add 3 grams of fiber to your recipe.
  • Add ground high-fiber cereals to your recipes, such as oats, wheat germ, and wheat bran.
  • For moister cookies, replace some of the fat with applesauce.
  • Add grated apples or zucchini
  • Add nuts or seeds. In addition to increasing the fiber, they add texture and crunch.
  • Replace some of the fat with pureed beans, such as garbanzos or white beans

4 Tips for Selecting a Coffee Machine To Give as a Gift this Holiday Season

We all have at least one special friend who’s totally nuts over coffee. If you’d like to give that person something he or she will definitely love, it’s got to be a coffee machine. Choosing a coffee machine as a gift may be challenging if you don’t know the basics because there’s just so many to choose from. There are simple drip makers, espresso makers, and Nespresso machines. What is the best Nespresso machine out there? What’s the perfect drip coffee maker to give? Don’t worry because I’m here to help you choose the perfect gift for a coffee lover. Here are four tips for selecting a coffee machine that would make a great gift this holiday season:

4 Tips for Selecting a Coffee Machine To Give as a Gift this Holiday Season

Coffee machine basics #1. Know your options

There are many types of coffee machines available. There’s the usual filter coffee makers, pod machines, espresso machines, and many more. Don’t get lost in the sea of choices. By being aware of their functions you can more easily make your choice.

Filter coffee makers are the most common ones in households today. It uses a filter paper you put in a filter basket where your coffee grounds are. Hot water then drips onto it and into your mug or coffee pot. These coffee makers can usually make 4 cups, but there are also bigger ones for a bigger party.

Pod coffee makers are pretty many newbies in the coffee machine industry. But no doubt they’ve earned their place. It works by inserting a single serve coffee capsule which the machine pricks into and drips some water. It’s definitely a great way to get barista quality coffee at the comforts of your own home. The only limitation is that you have to get your coffee pods from the same coffee maker because the cups are uniquely shaped per machine. Another nice thing about these types of machines is that there are pods available with other types of beverages, such as hot chocolate and tea, available, as well. Therefore it has a bit more beverage versatility.

Those are just a couple of options you’ll see when you start looking around. Make sure to check the shelves and consider what your friend would love the most. Which brings me to the next tip.

Coffee machine basics #2. Check for preferences

Nothing beats a personalized gift that actually touches on the recipient’s favorite things. How about a one cup coffee maker in her favorite color? With a bag of beans from his favorite coffee producing region? These little details matter. Check if your friend actually has an existing wish list you can draw ideas from. A bit of research goes a long way!

Coffee machine basics #3. Value for money

We always want to make sure we’re getting value for money in everything we buy. Is the coffee machine you’re eyeing worth it? Is it expensive but is known to be durable and long-lasting? Many factors come into play that adds value to the item you put in your cart. In terms of choice for coffee makers, you’ll never go wrong with the world’s most trusted brands. DeLonghi, Breville, Bunn, and Nespresso, these are arguably top of mind when it comes to coffee machines. You’ll never go wrong with a credible name.

Coffee machine basics #4. Ease of maintenance

Generally, the bigger the machine, the harder it is to maintain. Capsule coffee makers and the regular filter coffee makers are among the easiest to maintain in their line. You only need to dispose of the filter paper, wash the filter basket, and empty the water reservoir. A bit of wiping here and there in case of splatters, and you’re all set. Consider the complexity of the functions you want in your coffee maker. The more functions it has, the more moving parts it employs. Check with the sales crew and learn the different parts you need to clean.

If you make a good selection, your friend or loved one will be delighted with their new kitchen toy — and maybe invite you over to try it out!

Finding Inspiration For Your Next Big Banquet

Some people love the idea of being able to put on a great meal for their friends, creating an atmosphere of companionship over delicious food, while enjoying each other’s company and socializing. Back in the 1990s, before I got married the first time, I used to have monthly dinner parties. My most memorable meal was the Indian dinner … I’ll never make naan by hand again, but it’s nice to say I had the experience.

Anyway, people work very hard on this sort of event for their friends, pouring their time, energy and love into it. But, without the right inspiration, it can be hard to plan this out. With my parents and in-laws coming to Thanksgiving dinner, this sort of event is on my mind. So, to help you (and me) plan out a fitting banquet for friends and family, this post will go through some of the different places you can go when you’re looking for the right ideas for your meal.

Finding Inspiration For Your Next Big Banquet

Banquet Idea #1: Set a Theme

One of the best areas to start with is the event itself, and the thing you’re celebrating. Depending on the purpose of the event, a theme might be an obvious choice. A friend’s homecoming, for example, is the perfect chance to include some of the food they had during their time away. Or, if you’re celebrating someone’s birthday, you could think about their favorite foods or the most popular options where they come from. Going back to my Thanksgiving feast, I’m thinking of “Traditional Thanksgiving … with a healthy twist.” Setting a theme for your event is one of the easiest ways to get some good initial inspiration for your meal. From there, you just have to figure out the dishes you’ll be making to match that theme.

Banquet Idea #2: Culinary Research

At this point, you might have to do some research. For my own research, I do a mix of rummaging through my collectiong of cookbooks, searching online recipes and exploring social medial. If you’re cooking foods which are native to another country, you may have never experienced them before and will need to learn to how to make them. When I did my Indian dinner, I purchased a copy of Madhur Jaffrey’s Indian Cooking.

Along with this, though, you may simply want to get an idea of the different ways a dish can be made. Two of the best places for this is Instagram and Pinterest, as you can search through loads of people’s resources at once. With this, you should also look at recipe sites like Recipe Savants, which give you the chance to see loads of different detailed guides. Using resources like this will make it way easier to get inspired with new and creative meals.

Banquet Idea #3: Go on a Food Safari

Of course, the internet isn’t the only place which can be used to inspire your culinary creations. If you like cooking and enjoy trying new foods, you’ve probably spent a lot of time exploring the different places on offer in your area. If you can find a restaurant serving similar food to the dishes you’d like to create, paying a visit could give you a lot of inspiration. You will see how they are prepared professionally, giving you an idea of how you could do it yourself. I’ve gotten lots of ideas for recipes simply by experiencing them in a restaurant!

Banquet Idea #4: The Iron Chef Method

One of the best ways to come up with a unique meal is by starting with an ingredient you wouldn’t usually use. To get your hands on something like this, you may have to do some exploring. Most cities and towns are home to food stores stocking a wide-variety of different options from different cultures. I love exploring Asian markets, but you’d be surprised by the interesting things you can find at your local Trader Joe’s! By going to these places, you will almost certainly find options which you haven’t tried before.

Hopefully, this will give you some good ideas of the places that you can go when you’re trying to find new and interesting dishes to serve your friends. When trying to arrange a food-based party, your primary concern should be finding food everyone can enjoy. Without this, it will be hard to create a memorable and entertaining event.

Summer Road Trip Food You Can Prepare in Advance

With the summer come the summer trips … and if you aren’t prepared, the sky-rocking costs of eating out on the road. However, a day trip with the kids — whether to a theme park or just out for a drive to the coast — doesn’t have to break the bank. Nor does it have to be junk food. Read on for some ideas for road-trip food you can prepare in advance.

It makes both financial and nutritional sense to prepare summer road-trip food beforehand, pack everything into containers such as thermal lunch boxes and enjoy home-cooked goodness even when you’re far from your home.

Pre-prepared food, however, has a pretty dire reputation. Soggy lettuce, damp bread, wilted pasta – it’s not particularly appetizing, is it? That’s why you need some new, summer-friendly recipes that you can quickly prepare the morning before and still enjoy on your day trip.

Road-Trip Food Idea #1: Cumin Chicken & Pumpkin (with chickpea salsa)

Here’s an exotic twist to road-trip food. Chicken is a good meat to pre-cook, as it tends to keep its consistency well – just make sure you allow it to cool before packaging it away, unless you’re using a thermal container. This spicy, light recipe is found here. The pumpkin adds a sweet touch that the cumin cuts through nicely, but you could use any vegetable of your choosing.

Road-Trip Food Idea #2: Macaroni & Cheese

It’s a classic for a reason! Macaroni and cheese keeps well, and some people even prefer to eat it cold (the same is true of my third choice, below!). This has the extra benefit of being easy to cook. If you find mac and cheese a little bland, then recipes such as this one will change your mind for the better. On the road, pair it with kale chips which are quick enough to prepare and seal on the morning of your trip. This adds a gorgeous crunch to the meal while remaining nutritious.

Road-Trip Food Idea #3: Homemade Pizza

Pizza is a difficult one to master, but if you get it right, you’ll never need another takeout again. There’s no easy method of keeping the crust from getting soggy, so go for an Italian base so you limit the likelihood of that undesirable “mushy” feeling that some crusts can produce when left to cool. There’s a great option for Italian bases to be found here, which can ensure you get the best results. You might also try Boboli, which is nice and thick and holds pizza sauce well without getting soggy. As for toppings, the best bet is to stick with vegetables – squishy mushrooms, succulent peppers, and sweetcorn all make excellent options. If you really can’t go without the meat, you can’t go wrong with good old pepperoni.

Must-Serve Cocktails For Your Next Party

Summer cocktails make an excellent addition to a fun outdoor party. And, because of the selection of fresh fruits available during this time of year, you can incorporate them into your drinks to make them even more refreshing. Keep reading for inspiration.

Strawberry Wine Punch

There’s nothing like a fresh batch of summer strawberries, and you’ll love them in cocktail. Wine makes a great base for punch and strawberry wine adds a little sweetness that goes well with a light summer salad. With very few ingredients required, strawberry wine punch can be made in advance, or quickly for last minute dinner guests. You might even make some to unwind on Friday nights after a long week at work.

Bloody Mary

Is your party going to be a lavish brunch instead? Then the perfect cocktail is a Bloody Mary. Don’t limit yourself to just drinking it to treat hangovers; if they’re made with chilled Clamato juice and the perfect Bloody Mary seasoning, these cocktails will be a real a treat for your guests.

To make them even more exciting, experiment with different types of garnishes. You could opt for a classic celery stick, or you could expand the range to include pepperoni, smoked gouda, sweet cherry peppers, baby dill pickles, or even stuffed olives. Each garnish complements the spicy flavors of the Bloody Mary, and makes a simple cocktail into a delightful appetizer. You’ll never go back to the old garnishes ever again.

Sparkling Lemonade Sangria

Nothing conjures up the image of holidays in Spain like sipping a cold glass of sangria. This delicious sparkling lemonade sangria is the perfect refreshment to serve at a BBQ.

The night before your big party, marinate Moscato wine, berries, lemons, lemonade, and sugar in a pitcher. If you want to get a little creative, add in different kinds of fruits such as oranges, pineapples, and kiwis. You could also add some pink lemonade to your sangria to give it a little more color. I like to use frozen fruit instead of ice to keep it cold.

Ginger Beer-Pineapple Rum Punch

For those who want something sweet and spicy, this ginger beer and pineapple rum punch is guaranteed to delight the taste buds. Rum punch makes everyone feel like they’re on a tropical getaway in the Caribbean, so this is the perfect drink to serve with jerk chicken or seafood. This is yet another simple cocktail, requiring only fresh lime juice, ginger beer, dark Jamaican rum, and pineapple juice. Simply combine all the ingredients in a pitcher, stir well to combine, then pour over ice to serve.

Cider Rum Punch

As the warm weather begins to wane, a cider rum punch is perfect for warming the soul and holding onto the heat of the summer for a little while longer. Cider combines the fruity, fresh taste of summer with the warmth and depth of fall.

I hope these ideas inspire you to get creative in the kichen and develop some summer cocktails of your own — and remember, they don’t need to be alcholoic to be enjoyed!

Suggested Easter Menu

Over the past two weeks, I’ve been sharing recipes, tips, and ideas for a simple and easy to make Easter menu. Today I’m bringing it all together for you in one post (with links)!

suggested easter menu

Easter Menu Appetisers

Easter Menu Side Dishes

Easter Menu Main Dish

Equipment You’ll Need … or Want

To prepare many of these dishes, you’ll need a slow cooker. In fact, it might be a good idea to have more than one! I have two, and one of them comes with a pot that is divided into two parts. There are also slow cookers that have multiple pots, made especially for use at parties.

Getting eggs to hard boil so they create nice, clean halves can be tricky. Often to get a dozen good-looking eggs, you need to cook two dozen! There are two ways around this conundrum: Buy eggs already hard boiled (you can find them in the refrigerator section of your grocery store) or use a specialty egg cooker.

You can simply spoon the egg filling into the halves and it looks just fine. But for that extra touch, you might want to use a pastry cone, cookie press or specialty egg maker.

And finally, to create a nice display, you might want to have a deviled egg tray. This is a special tray with egg-shaped indents that hold the eggs so they don’t flop over.

If you decide to have a sweet potato bar or any other type of “select your own toppings” display, it is helpful to have plenty of small bowls on hand. I like to use ramekins.
